The tart, and more particularly the fruit tart, is one of the most popular desserts in France. Every family has its own favourite recipe, and fillings vary from region to region. Normandy Apple Tart (Tarte Flan Normand) is the classic apple and almond tart from Normandy, a region with abundant apple orchards and dairy farms. The deep bluey-purple Bilberry Tart (Tarte Myrtilles) features the native European Bilberry, found in the foothills of the Vosges Mountains, Lorraine and Alsace. Their slightly acidic character makes for a lovely contrast with sweetness of the crème pâtissière. For our Red Fruit Tart (Tarte Fruits Rouges) we use a luscious combination of cherries, raspberries and blackberries, whilst Pear and Cinnamon Tart (Tarte Poire Cannelle) unites cinnamon with pears in a delicious alternative to the more traditional pairing with apple. Whatever tart you choose, it’s sure to bring some French sunshine into your life.
