Food For Brighter Days


We are incredibly excited to announce that our new salad collaboration with Doctor, registered Nutritionist, and best-selling author Dr. Hazel Wallace, aka The Food Medic, is launching in our stores, through Deliveroo, and Uber Eats from Tuesday 22nd June.


As most of us aren't able to travel this year, we've worked together with Dr Hazel to bring the sunshine to you, with a collection of three balanced, bright, and flavour-packed salads and aswell as two breakfast pots - food perfect for brighter days! Health and well-being were front of mind whilst developing the collection, and together we wanted to create the perfect range for summer picnics, weekend lunches, or working from home, which make you feel good, without compromising on flavour.


Within our Food Medic range of 6 products, three are vegan, providing our vegan, vegetarian and flexitarian customers with increased options to suit their eating plans, as we all look to a more sustainable way of living.


Working with Dr Hazel on our second collection has been an exciting journey, one where we have explored bold flavours and ingredients never before seen at PAUL.

Key Flavours - Summer Range

We just love Zhoug, a vibrant spice paste made from coriander, cloves, parsley, and green chilli, often found in Middle-Eastern street food. Zhoug brings our salad dressings alive, and elevates our salads.


Rose Harissa is a key flavour in the collection, adding a flavour-bomb of sweet smokiness, and a subtle heat to our salad dressings. A key element to North African cuisine, our rose harissa dressings make the fresh ingredients in our salads sing, and transport you to warmer climes.

Dr. Hazel has worked closely with us to create our fantastic new recipes for summer, with food to take you right through the day including breakfast pots, sweet and savoury open sandwiches, salads, sandwiches and rolls. “our aim with this range was to create well-balanced, tasty and plant-focused meals together,” says Dr. Hazel, “and I really hope you will agree that we have absolutely achieved that.” Why not start by trying our colourful Jackfruit & Mango Salad or the fabulous Vegan Reuben ? Dr. Hazel Wallace is the founder of The Food Medic. She is a qualified medical doctor, best-selling author, content creator, and registered associate nutritionist, and author of The Food Medic. She started ‘The Food Medic’ blog in 2012, as a medical student, in a bid to bridge the gap between conventional medical advice and the latest thoughts and developments in nutrition and other areas of lifestyle. The blog has now extended to various other platforms and publications including social media, books, and a podcast. Her debut book The Food Medic was released on May 4th, 2017 and made both the UK and Irish Bestseller lists (at number 3 and number 1 respectively). Her second book The Food Medic for Life was released the following year in April 2018, which also made the bestseller charts.
