At this time of year our bakeries fill with glorious, golden Galettes des Rois, a rich all-butter puff pastry cake filled with frangipane cream. It celebrates the arrival of the Three Kings in Bethlehem, an event marked on Epiphany, 6th January. It’s also an opportunity to play a light-hearted French game. Each cake has a ceramic charm baked into it and whoever finds it in their slice gets to be King or Queen, wear the gold card crown that comes with the cake, and boss everyone about for the rest of the day!

The tradition is an ancient one. One story is that it goes back to Roman times when masters and slaves would eat together, a bean (the fève, as it is still known) would be baked into the cake and whoever found the bean in their slice would be crowned King of the feast. This tradition was then adopted by Christianity and linked to the Three Kings, popularly defined as Melchior, Caspar and Balthazar.
Every year at PAUL we issue a new set of unique ceramic charms, much prized by collectors. This year’s set features gingerbread men, snowmen, reindeer, hearts and crowns.
For us, sharing the Galette is a way of celebrating the New Year with family and friends. It is the epitome of midwinter sociability. January is peak galette time and it really is the most friendly of cakes, providing the perfect excuse to invite friends, neighbours or family round to share it. It’s less of a commitment than dinner, but still decidedly celebratory.
In France we serve the Galette with cider or sweet white wine – and apple juice for children – but it’s equally good with a hot drink, or a glass of fizz. It’s also delicious warm, so heat at 180 degrees for 8 minutes. Add a scoop of creamy vanilla ice cream for extra indulgence.
