BAKERS SAY IT WITH FLOURS!

WHY WE USE SEVEN DIFFERENT VARIETIES OF BREAD IN OUR ARTISAN SANDWICHES

 

Did you know that we bake our own bread every day by hand, the proper old-fashioned French way?  There are no shortcuts.  It takes seven hours to bake every loaf of PAUL bread.  We allow our dough to ferment for longer to allow it to develop its full fragrance and flavour.  We use our own flours, specially imported from France, only natural yeast and sea salt and absolutely no additives or preservatives. A PAUL sandwich is made with all of our 127 years of baking expertise.  Each baguette is individually shaped by hand in our bakery and freshly filled in our shops, and couldn’t be further from the uniform, chilled, packaged sandwich with its two square bread slices with a filling slapped in.

AN AMERICAN IN PARIS!

“Why be a second rate Ravel when you are a first rate Gershwin?”

This was, apparently, Maurice Ravel’s response to George Gershwin when he petitioned to study with him in Paris.  In fact, when he heard how much George was earning on Broadway, he is said to have commented “You should be giving me lessons!”  Gershwin was very influenced by French composers of the early 20th Century, and was drawn especially to Ravel’s unusual chords.  The first version of “An American in Paris” was a brief fragment he composed called “Very Parisienne”, written as a thank you gift to his hosts after his first visit to Paris in 1926.

THANK YOU SO MUCH FOR BUYING YOUR FRESH BREAD FROM PAUL AND HELPING US RAISE £15,000 FOR THE FELIX PROJECT

Between 12th December and 15th January, for every 400g (or larger) loaf that you bought at PAUL, we donated 50p to The Felix Project, as a result of which we have raised £15,000.  The charity is going to use the money to buy a new van, enabling them to keep up the good work of distributing London’s surplus fresh food to feed the homeless, those living in poverty and families who are struggling to get by.  It was wonderful to see how many of you embraced our Christmas campaign, helping us to raise such a significant sum.  Merci.
